Creamy Sweet Potato soup


Ingredients:

  • 1 large sweet potato, peeled and chopped into bite size pieces
  • bunch of baby carrots
  • 3 ribs of celery
  • 1 red onion
  • 1 tablespoons of coconut oil
  • Vegetable broth (organic and low sodium)
  • 1tsp cumin powder
  • Pepper to taste
  • Himalayan salt and pepper, to taste 
  • handful of cilantro


Recipe:

Bring some water to a boil and cook sweet potatoes until tender. 
Chop the onion finely, chop half the celery and carrots into small pieces.  Cook chopped veggies in heated cucumber oil over medium heat in a large pan until onions are translucent and celery and carrots slightly cooked.  Add a few tsp of veggie broth if it gets too dry, and add the cumin, pepper and salt.


I chose to cook only 1/4 of the veggies to retain more nutrients in the raw veggie (only slightly heated after blending). Blend the rest of the raw carrots and celery in your blender with some veggie broth until smooth. Add the cooked sweet potatoes and blend again. Add fresh cilantro, the cooked onions, carrots and celery and blend lightly.  I like to have a few small chunks of the cooked onion, celery and carrots, so I don't bend too long after adding it. 

Return blended soup to pan and heat to desired temp to enjoy.  Serve and eat immediately.

Sweet potatoes- are rich in a number of micronutrients, the most prominent of which are vitamin C and beta-carotene; both are powerful antioxidants that can significantly decrease your risk of experiencing cardiovascular disease, including diabetes, and various types of cancer, including colon cancer.      If your digestive tract is relatively healthy, and you regularly eat healthy fats, your body can convert some of the beta-carotene found in sweet potatoes into vitamin A. And vitamin A can promote optimal immune system strength, a healthy digestive tract lining, optimal vision, and healthy skin.      Sweet potatoes are also abundant in manganese, copper, dietary fiber, vitamin B6, potassium, and iron.

All ingredients - excluding cilantro
 boil sweet potatoes until soft
 chop onion finely
 Chop some of the celery and carrots in small pieces
 Heat oil and cook onion, carrots, celery and add cumin powder 
Add few tbs of veggie broth if it gets too dry
Blend the raw carrots and celery with some veggie broth
 Add the cooked sweet potatoes and blend until smooth
 Add cilantro
 Add sauteed onions, carrots and celery and blend lightly until mixed, leaving very slight chunks (is my preference)
Return to stove to reheat to desired temp 
 Enjoy! I added some cayenne, which made it more warming and even more delicious^_^
