Ground cherry tomato Salsa


Ingredients-
  • 3 large red tomatoes
  • 2 cups of cherry tomatoes
  • 3/4 cup of ground cherry tomatoes
  • 1/2 red onions
  • 1/2 tsp cumin powder
  • 1/2 tsp salt
  • 1/4 tsp sugar
  • 2 Chinese 5 color hot peppers
  • 1 lemon
  • cilantro (I didn't have any but this is usually an essential for my salsa!) 
Recipe

Chop up the onion into very small pieces. Roughly chop up the large tomatoes. Add all other ingredients and blend. Salsa is ready to eat! Store in fridge. Store in jar. Be sure to shake before opening and serving, it tends to separate, especially with juicy fresh tomatoes.

Deviled Eggs


Ingredients - 
  • A dozen Eggs
  • 3 Tbsp Vegenaise
  • 1 Tbsp Dijon Mustard
  • 1/4 tsp dill
  • Green onion tops
  • celery
  • Roasted paprika

Directions

Heat the eggs in a pot of water just covering the eggs. Bring to a boil, then let boil for two minute. Turn off the heat and cover for 10 minutes. Immediately place eggs in ice water. Once cool, peal and cut into half. Empty yokes into a bowl and mash with a fork. In another bowl combine the Vegenaise, dijon mustard, dill, green onion and celery. Be sure to chop the onion tops and celery into very small bits. Mix together well, then add to the mashed up yokes. Mix until smooth.  Add the mixture to a plastic sandwich bag and cut a small hole into the corner. Squirt enough yoke mix into each egg white. Top with paprika and it's ready to eat! Store in fridge.

Cucumber Salad


Ingredients-
  • 5 Cucumbers
  • 1/2 red onion
  • 5 Tbsp Vegenaise
  • 1 tsp dill
  • 3 tsp sugar
  • dash of salt
  • 1/2 tsp vinigar



Directions-

Slice the cucumbers into thin slices and lightly sprinkle with salt. (optional drain liquid from cucumber). Chop up the onion into very small pieces. Grind the sugar and add it to a bowl with the Vegenaise, dill, and  vinegar. Mix the sauce until well blended and add the red onion. Pour the mixture over the cucumber and mix in well. Let sit in fridge for at least half an hour. Lasts over a week in fridge. I usually keep adding fresh cucumber to the sauce so it lasts continuously.
The access sauce makes for a great salad dressing or sandwich dip.
