Collard kale wrap


Very similar to the last kale wrap recipe with a few added ingredients...onion and home made hummus. I used my regular raw kale recipe and wrapped it into a collard green leaf

Raw Kale salad wrap Ingredients
  • 1 large collard green leaf
  • Curled kale, Dino kale and Red Russian kale
  • 1 avocado
  • 1 organic tomato (a few cherry pear tomatoes)
  • half a cucumber
  • ½ organic lemon
  • ½ Sweet Orange Bell Pepper
  • Cold pressed extra virgin olive oil
  • 1/4 -1/2 tsp of Himalayan salt
  • dill cucumber salad (home made relish - thin sliced cucumber, vinegar, coconut crystal and dill) 
  • Home made hummus (recipe in yesterday's blog)
Raw Kale salad Recipe
  • Wash veggies and your hands
  • Chop up all ingredients in small pieces. No need to chop up the avocado.
  • Put chopped up kale in large bowl
  • Pour in juice from lemon, Himalayan salt and drizzle with olive oil
  • Massage kale until nice and soft
  • Then add in avocado and squish in (avocado, lemon and olive oil are all great for your skin! So dig in there)
  • Throw in the rest of the ingredients (tomato, cucumber, orange bell pepper  and red onion) and mix up
  • Your kale salad is ready to eat:)
Spread some hummus, then pile in as much salad as you want and put a few fresh tomato slices and cucumber relish and wrap up. Ready to eat!
 Ingredients for kale salad
Massage in the salt, olive oil and lemon into the kale to soften...then mix in the avocado with the kale until creamy, then mix in the cucumber, orange bell pepper, tomato and onion
Kale salad is ready! Eat alone, with salad (fresh spinach or lettuce)or place in wrap
Spread some hummus at the base, pile in the kale salad, top with cucumber dill relish and tomatoes
Wrap it up securely once piled up
I secured it with a toothpick while I prepared the other half of the collard green leaf
It's not ready to eat! Enjoy
