Chocolate Zucchini Muffins

Chocolate Zucchini Muffins
Vegan, Gluten Free

Ingredients:
1 box gluten-free muffin mix
6 tbs cocoa butter
1 1/2 cup shredded zucchini
1 tsp vanilla
dairy/soy free chocolate chips
cinnamon
cocoa powder
coconut crystals

Recipe:
1. Preheat oven to 350F.  Mix the egg, melted cacao butter & vanilla. Add in muffin mix and blend. Mix in zucchini and stir with spoon. Then fold in chocolate chips.  I added cacao powder, cinnamon and coconut crystals for a few for variety.

2. Pour patter into 2 12 muffin tins.  Bake about 18 minutes or until browned and a toothpick comes out clean.
Mix all ingredients....folding in zucchini and chocolate chips (I did not drain the zucchini to keep moisture)
 I varied the flavors, adding cacao powder to some, cinnamon, and coconut crystals

 they took about 18-20 minutes with my oven
