Ingredients:
- 2 ounces rice vermicelli
- rice wrappers (8.5 inch diameter)
- avocado
- chopped cucumber
- chopped fresh cilantro
- shredded lettuce
- large cooked shrimp
- sweet and spicy sauce for spring rolls
- chili garlic sauce
Recipe:
- Bring a medium saucepan of water to boil. Boil rice vermicelli 3 to 5 minutes, or until as soft as you desire. Drain and pour into a bowl of cold water to stop cooking and cool.
- Fill a large bowl with hot water. Dip one wrapper into the hot water for a second or two to soften. Lay wrapper flat on plate. In a row across the center, place 2 shrimp halves, a handful of vermicelli, avocado slices, cilantro and lettuce, leaving about 2 inches uncovered on each side. Fold uncovered sides inward, then tightly roll the wrapper, beginning at the end with the lettuce.
- In a small bowl, mix the sweet and spicy sauce with some garlic sauce for dipping. Enjoy!

shred ingredients, I put a little bit of lemon over the sliced avocado to prevent browning and add a little zing

I simple boiled the shrimp slightly, then sauteed with a little bit of garlic powder
