Spring Rolls


Ingredients:
  • 2 ounces rice vermicelli
  • rice wrappers (8.5 inch diameter)
  • avocado
  • chopped cucumber
  • chopped fresh cilantro
  • shredded lettuce
  • large cooked shrimp
  • sweet and spicy sauce for spring rolls
  • chili garlic sauce  
*note - or any dipping sauce you prefer, such as peanut sauce. I like it sweet and spicy

Recipe:
  1. Bring a medium saucepan of water to boil. Boil rice vermicelli 3 to 5 minutes, or until as soft as you desire. Drain and pour into a bowl of cold water to stop cooking and cool.
  2. Fill a large bowl with hot water. Dip one wrapper into the hot water for a second or two to soften. Lay wrapper flat on plate. In a row across the center, place 2 shrimp halves, a handful of vermicelli, avocado slices, cilantro and lettuce, leaving about 2 inches uncovered on each side. Fold uncovered sides inward, then tightly roll the wrapper, beginning at the end with the lettuce.
  3. In a small bowl, mix the sweet and spicy sauce with some garlic sauce for dipping. Enjoy!

 shred ingredients, I put a little bit of lemon over the sliced avocado to prevent browning and add a little zing
 Boil rice vermacelli

 give it a cold water bath, then drain

 dip rice paper in hot water until soft

 lay ingredients over a row in the middle of the rice paper

 fold close and cut in half...
 dip and it's ready to eat!  This is the green one...all green veggies
 This is the same apart from added cooked shrimp
 I simple boiled the shrimp slightly, then sauteed with a little bit of garlic powder
