Quinoa

 
My favorite staple food is quinoa, which I discovered just a year and a half ago when I decided to go gluten free. It is a great alternative to rice in dinner dishes and as a hot cereal for breakfast as well.
The Inca warriors used to eat quinoa right before battle to give them energy and more stamina! 

  • Quinoa is a complete protein w/ all 9 essential aminos, including lysine and isoleucine 
  • Filled with Iron
  • High in Magnesium, folate, and fiber, as well as bone-building phosphorus and coppe
  • B-2 vitamins for energy
  • Lysine which is essential for tissue & growth repair 
  • Provides a variety of antioxidant phytonutrients, including ferulic, coumaric, hydroxybenzoic, and vanillic acid
    Antioxidant flavonoids including quercetin and kaempferol are also especially plentiful 
  • Anti-inflammatory polysaccharides in quinoa include arabinans and rhamnogalacturonans
  • Many members of the vitamin E tocopherol family are provided, including important amounts of gamma-tocopherol
  • Gluten-Free
  • Alkaline for your body!

Super easy to make, 2 cups of water for every cup of quinoa (ie. double water).
