Gluten/Dairy Free Coconut/Chocolate chip cookies


Ingredients
  • 1 package Wholegrain Chocolate Chip Coconut Cookie Mix
  • 1/2 cup earth balance (dairy free butter alternative)
  • 1 egg
  • 1 tsp vanilla extract
Note: Next time I plan to use a fresh vanilla bean...the extract was a little too much for me.  I  used 1tsp instead of the 1tbs that the recipe on the bag suggested, and 1/2 cup of butter alternative instead of 3/4 cup, which i felt was plenty:) Next time I'll make them with coconut oil, since they are coconut cookies after all, but this time I wanted to test out earth balance...which is actually a pretty sweet tasting butter alternative.

Recipe
Preheat oven to 350 degrees F.  Using an electric mixer, cream together the earth balance (butter alternative) and egg. Mix in the vanilla (which I may leave out altogether next time or use fresh) Add contents of dry ingredients package. Mix well until all ingredients are combined. Drop by tablespoon amount onto cookie sheet (be sure to use unbleached parchment paper). I rolled and squished each cookie dough portion but I'm sure they would turn out great just dropping cookie sized blobs:) Bake at 350 for 12-14 minutes. Longer if you want them super crispy 12 min if you want them alil' soft but done.

 Blend egg, earth balance and vanilla extract until smooth
Then mix in the cookie mix (I was going to add more chocolate chips but they included plenty!)
Blend until all mixed in well
Make them the size you want
...and stick them in an oven at 350 for 12-14 minutes.  Batter mix makes 24 cookies, but I kept some batter to make another day so It will easily make an additional 12-15 more at this size.  
 When they look done take them out and top with extra chocolate chips if desired (as I did)
And they are ready to serve and eat!
Each cookie only has 8 grams of sugar (serving being larger than the cookies I made) not from refined sugars, and no dairy, gluten or soy.
