- Left over rice and coconut curry with sweet corn (perfectly chilled already:)
- Avocado
- Cucumber
- Freshly toasted sesame seeds
- Baby spinach
- Cilantro
- Nori roll sheets (I used raw nori rolls but you can use toasted)
- tahini
- Low-sodium soy sauce for dipping
Recipe
Finely chop up the cilantro, cucumber, avocado, then layer ingredients on one side of the nori sheet, and roll up! Add a drizzle of tahini on the opposite end to help seal up the roll. Carefully cut into bite sides rolls.
I made several servings within the day - dipped lightly into some soy sause
