Sushi - vegan

Ingredients
  • Left over rice and coconut curry with sweet corn (perfectly chilled already:)
  • Avocado
  • Cucumber
  • Freshly toasted sesame seeds
  • Baby spinach 
  • Cilantro
  • Nori roll sheets (I used raw nori rolls but you can use toasted)
  • tahini 
  • Low-sodium soy sauce for dipping

Recipe
Finely chop up the cilantro, cucumber, avocado, then layer ingredients on one side of the nori sheet, and roll up!  Add a drizzle of tahini on the opposite end to help seal up the roll. Carefully cut into bite sides rolls. 



 I made several servings within the day - dipped lightly into some soy sause
 The loaded one, with a tiny bit of ranch for extra flavor
 rocked up as tightly as you can...then cut
 Another serving
 And one more...
Every last piece was enjoyed:)  
Made some sushi lovers out of a few people who were too afraid to try some at first!
