Vegan Quinoa & Veggie dish

One of my current Quinoa & Veggie dishes

Ingredients:
1 zucchini
1 sweet potato
1 tomato
1 red onion
1 pack of baby bella mushrooms
organic baby spinach
garlic
ginger
organic vegetable grilled seasoning
3 tbs coconut cream
1/2 green chili minced
1tsp black mustard seeds
1tsp cumin spice (jeera)
olive oil


quinoa (1/4 cup per serving)
water (I used 1/2 quinoa and 1 cup water)
Himalayan salt


Recipe:
Cook quinoa separately with twice as much water than quinoa. Add a dash of Himalayan salt. Let simmer covered on medium until liquid is evaporated and white dot is near disappeared in center of seed. Let sit covered with fire off to finish plumping up.

Boil sweet potato in separate pan as well and keep aside while cooking other ingredients in main dish

In a large pan, heat olive oil on medium heat with black mustard seed and jira.
Then add onions when oil is hot and saut.
Add the tomatoes and stir for a couple minutes, then add the zucchini and mushroom.
Add the garlic and ginger and sprinkle on the vegetable seasoning onto veggies.
Stir it all together and cover for a couple of minutes to steam cook.
Place the spinach leaves on top of the food and cover for a few minutes
Once the leaves begin to wilt turn the heat even lower  
Add a few table spoons (eyeball it) into the pan and stir
Add the cooked sweet potato (that you should boil until tender in separate pan while starting the onions)

*I would also add cilantro (but I was out) it really adds to the dish!
*Also I find the mushrooms cut slightly thicker really adds to the dish so they don't shrivel away
