Dinner Angel Hair Pasta

Angel Hair pasta with mixed veggie stir fry and shrimp
Stir Fry Recipe below makes 2 servings
I cook one serving of pasta and 2 servings of stir fry, then refrigerate one serving for lunch the next day. I then make fresh pasta to have with the left over stir fry.
This stir fry is my most favorite healthy hot meal to make and eat.  It takes under half an hour to make. I love the thin pasta, fresh veggies and natural saltiness of the shrimp. I add No salt when I cook this dish for myself, only healthy spices and lots of green chili pepper and cayenne to taste.  This dish is still chalk full of flavor.  I usually add chopped up snap peas and long green beans as well but I didn’t have any to use during the demonstration.  I also usually add a fresh chopped up green chilly because I love my food spicy, but I omitted it today and only used cayenne (which I add to everything I cook…and add more after to my plate if it’s not hot enough).

*Angel hair pasta tips- Angel hair pasta cooks a lot faster than spaghetti so you want to cook it for half the time, around 3-5 minutes. You want it al dente for optimal health benefits. Whole grain al dente pasta causes a lower glycemic response than longer-duration/soft cooked and refined white pasta. Lower glycemic foods are more slowly absorbed into the bloodstream and don’t create a quick blood sugar rise.
*The healthiest oil to use is extra virgin cold pressed olive oil (the less processing it goes through the more nutritious it is). Olive oil actually gives you more health benefits when not heated/cooked.  A great way to get it's benefits is to make a salad dressing with olive oil.

Angel hair pasta Recipe

1.      Heat 1 tbs of extra virgin olive oil in pan with fresh ground cumin and mustard seeds on high heat until hot. Takes around 2 minutes.

2.      Add onion and reduce to medium-high heat for the duration. Stir for about 2 minutes.

3.      Move onions to the outsides of the pan leaving the middle empty and spray with olive oil spray if pan is dry. Add zucchini in one layer to brown for about a minute or 2. Sprinkle garlic powder over it and turn it over to brown on the other side.

4.      Stir onions and zucchini all together then scoot it around the sides of the pan again to open up space to add the yellow pepper and mushrooms in one layer. Once again spray pan first with olive oil before adding them, and turn over to brown both sides.

5.      After about a minute or 2 mix everything together again and scoot it all over to add the shredded cabbage.  I don’t usually spray the pan before but you can. Add ¼ cup of water. Then add the garlic paste, ginger paste, black pepper, cayenne, cumin powder and coriander powder. Squirt a good amount of lemon juice and mix the cabbage all together with the spices in the middle of the pan.

6.      Again only after a short minute or 2 mix all the veggies together and make room in the middle for the tomatoes. I like to add the tomatoes last so they don’t disappear into the dish.

7.      Mix all the veggies together for a minute or 2, then add the remaining ¼ cup of water, mix everything and cover for 5 minutes while you make the shrimp and pasta.

8.      By this time you want to have boiling water ready. Add the pasta to the boiling water and set the timer to 4 or 5 minutes.  Once done you want to remove it from the stove and strain immediately to serve.

9.      While the veggies are simmering covered, and the pasta is cooking, prepare the shrimp within those 5 minutes…that’s all it the time will take.  Heat the pan on medium-high heat with olive oil spray and add shrimp once the pan is hot. I make sure to pat my shrimp very dry to remove any fishy taste before cooking. They get very moist from thawing in water before cooking. (If I cook it without letting it drain enough, I usually cook it alone and drain the water that heats out of it before spraying it with olive oil). So I soak them 1st thing, then drain them as soon as possible, then leave them in a bowl/strainer while I cook everything else to let excess water drain.   Add the shrimp to the pan and sprinkle it generously with pure garlic powder.  Shake shrimp in pan then flip each over to brown the other side. Squirt lemon juice over shrimp and shake pan again to coat the shrimp with all the yummy garlic on the pan.  When done they should look slightly blacked like very lightly breaded shrimp, coated only with garlic powder and lemon juice...yumm!

10.   By the time the timer goes off, the pasta is ready, the stir fry is ready and the shrimp is ready.  Turn all the burners off and add the cilantro to the veggies and mix in.  Serve the pasta on the plate, pour the veggies over and place the shrimp on top and you have a very filling, delicious, healthy meal for under 400 calories!

Angel hair & Stir Fry Health benefits and more info:

1.      Whole wheat/whole grain angel hair pasta- I usually get Certified Organic whole wheat Gourmet Pasta with milled flax seed for extra health benefits. But the one I used is also a good one.  Hodgson Mill Organic Whole Wheat Angel Hair with Milled Flaxseed contains 500mg Omega-3 oils per serving. Made with No. 1 USDA premium wheat. They are rich in whole grain to help reduce the risk of heart disease and certain cancers. The Food and Drug Administration agrees that diets rich in whole grain foods and other plant foods and low in total fat, saturated fat cholesterol may reduce the risk of heart disease and some cancers.

2.      Mixed Veggies- It is proven that vegetables contain a number of antioxidants that may help to stop certain cancers from forming in the body.  These antioxidants like vitamin C also help the body to repair after long bouts of stress and illness and help to protect the body in the future. You want to consume a variety for a variety of health benefits.

a.)    Mushrooms- (a legume, not a vegetable) are among the most nutritious, healthiest, best foods we can add to our diet. Mushrooms are high in caretenoids, contain potassium, foliate, copper (to help produce red blood cells), riboflavin (B2; to help maintain red blood cells and give us energy), and niacin (B3; for healthy skin, and the functioning of our digestive and nervous systems, giving us energy). They naturally contain Vitamin D, and selenium and saponin are among their many antioxidants. Some studies have shown mushrooms can also help our immune systems.  They are fat-free, cholesterol-free, low in calories, and very low in sodium.  Every kind of mushroom basically has the same nutrients, but their amount of each nutrient varies.  For example, a medium-sized portabella, even grilled, has as much potassium as a medium-sized banana, and great amounts of selenium, while shitakes have less potassium but more selenium. And despite being "common," white buttons (ones used in this dish) not only have more protein than portabellas or shitakes, but they contain all the nutrients and antioxidants found in more expensive mushrooms.

b.)   Onions- are a very good source of vitamins B6 and C, chromium, biotin, and fiber.  They are also a good source of folic acid and vitamins B1 and K.    The health benefits provided by onions are mostly due to their content of several organic sulfur compounds.  Studies have shown that, like garlic, onions and onion extracts decrease blood lipid levels, prevent clot formation, and lower blood pressure.  They have a significant effect in lowering blood sugar levels.  Throughout history, onions have also been used to treat asthma.  Their action in asthma is mostly due to their ability to inhibit the production of compounds that cause the bronchial muscle to spasm, which then causes the muscle to relax.  The high content of iron in onion makes it beneficial for the treatment of anemia.  Just by eating half a medium raw onion daily can significantly lower cholesterol and help prevent heart attacks. The anti-inflammatory agents in onion are useful in reducing the symptoms of inflammatory conditions such as arthritis and gout.  Fights infection bacteria, including E.coli and salmonella, and is effective against tuberculosis and infections of the urinary tract, such as cystitis.

c.)    Zucchini- Helps cure asthma, as it contains Vitamin C, which is a powerful antioxidant and has anti-inflammatory properties and can provide protection against cardiovascular disease. The vegetable is known to help prevent diseases like scurvy and bruising, caused by the deficiency of vitamin C. Regular intake of zucchini effectively lowers high homocysteine levels in the human body. The vegetable can help prevents risk of having multiple sclerosis (MS). They have high water content (over 95%), high nutritious value and contain a very low amount of calorie It contains useful amounts of folate, potassium, and vitamin A, necessary for proper functioning of the human body. Zucchini contains lutein along with Vitamin C, both of which are known to be good for the eyes. The vegetable is a good source of vitamin B6, riboflavin, manganese and a lot of other nutrients. Eating zucchini is known to help the body in supporting the arrangement of capillaries. Regular consumption of the vegetable can help protect the body against colon cancer. It’s believed to be beneficial in preventing heart disease and related symptoms, such as high cholesterol. The rind of zucchini contains the nutrient beta-carotene, which is known to be full of antioxidant properties and thus, helps protect cells against oxidation damage. It proves to be a good source of magnesium and phosphorus, the nutrients essential for building and maintaining healthy bones.

d.)   Tomatoes- Tomatoes are rich in moisture, vitamins and minerals, and phytonutrients.  They are an excellent source of vitamins C, B6 and K, betacarotene, biotin, niacin, potassium, phosphorous, calcium, iron, zinc and selenium, as well as of many organic acids such as citric and malic acids which are responsible for the characteristic tomato flavor. Tomato seeds and skin are good sources of fiber, while the red flesh contains a powerful anti-oxidant, the carotenoid pigment lycopene, which provides the fruit’s red color. Lycopene in tomatoes is said to improve the skin's ability to protect against harmful UV rays. The high content of potassium and phosphorous in this red juice helps relieve the symptoms of stress, tiredness, fatigue, muscle weakness, as well as prevent muscle spasms and cramps. Tomato improves heart health by helping lower blood pressure. Not only does tomato juice has anti-oxidant and diuretic properties and improves the digestive function, it also stimulates the detoxifying function of the liver and kidneys. A carotenoid pigment found in the skin and flesh of tomatoes, may play a role in the  prevention of some types of cancer, including lung, prostate and colon cancer.

e.)    Cabbage- This parcel of vegetable is nutrient-packed and low in calorie.  It is impressive with its high content levels of calcium, iron, iodine, potassium, sulfur, and phosphorus.  In the vitamins department, it is loaded with vitamins A, B1, B2, B6, C, E, K and folic acid. This humble vegetable is a rich source of a number of phytonutrients which help boost our defense mechanisms, blocks the reaction of cancer-causing substances, detoxifies and eliminates harmful toxins and hormones, and stimulates production of antibodies to fight cancer.

3.      Spices- Herbs and spices have more disease-fighting antioxidants than most fruits and vegetables.

a.)   Extra Virgin olive oil- reduces the of risk of cardiovascular diseases and has shown beneficial effect on ulcers and gastritis. Using olive oil as main dressing oil helps preventing constipation and in general maintains the digestive tract in good health.  It helps to reduce blood pressure and may help in lowering cholesterol.  Olive oil eases or prevents diabetes,  lessens the severity of asthma or arthritis, can possibly help in the prevention of colon cancer, moisturizes skin and slower aging process.

b.)   Garlic- is a natural antibiotic. The bacteria in the body do not appear to evolve resistance to the garlic as they do to many modern pharmaceutical antibiotics. They also can have a powerful antioxidant effect. Antioxidants can help to protect the body against damaging free radicals.  Due to its anti-carcinogenic properties it also reduces the risk of cancers.  It can lower blood pressure, decrease platelet aggregation, lower serum triglycerides and LDL-cholesterol (the bad type) levels increase serum HDL-cholesterol (the good type) and fibrinolysis (the process through which the body breaks up blood clots.)  Plus it stimulates the production of nitric oxide in the lining of blood vessel walls, a substance that helps them to relax. As a result of these beneficial actions garlic helps to prevent arteriosclerosis and thereby reduces the risk of heart attack or stroke. Two or three cloves a day have cut the risk of subsequent heart attacks in half in heart patients.

c.)   Ginger- is a strong antioxidant, antimicrobial (kills bacteria - including salmonella) - internally and topically as an antiseptic. Two natural antibiotics are found in ginger. It contains anti-inflammatory agents, helps eliminate congestion, contains zingibain that dissolves parasites and their eggs.  Ginger root tea eases some throat pain, kills cold viruses, inhibits production of cytokines which cause pain and swelling, combats chills and fever.  Ginger inhibits 5-LO enzymes, the only food for prostate cancer cells, prostate cancer cells die in one to two hours without this enzyme.  A component of ginger suppresses metastasis (stops the spread) in any type of cancer cell including leukemic, skin, kidney, lung, and pancreatic cancer cells - one of the most exciting and powerful health benefits of ginger! Ginger aids in circulation, digestion, and other body systems functions like in the lungs, hot flashes, headaches, arthritis, and reduces the severity of post chemotherapy nausea.

d.)   Cayenne- is a pretty amazing spice. It can do everything from kill cancer cells in the prostate, lungs, and pancreas to immediately stop a heart attack within 30 seconds.   It helps in circulation, high blood pressure, cleans the arteries and helping to rid the body of the bad LDL cholesterol and triglycerides.  It has antifungal properties, immune system benefits, alleviating allergies, muscle cramp, improving digestion, and helps wound healing with minimal scar tissue.  Great for heartburn, atonic gout, in paralysis, in dropsy, in tympanitis, and in the debilitated stages of fever and so much more…cayenne pepper is literally one of the greatest health secrets in the world.  Thankfully I love the stuff:)

e.)   Black Pepper- improves digestion and promotes intestinal health. It helps one to lose weight (the outer layer of peppercorn assists in the breakdown of fat cells).  The antibacterial property of black pepper helps to fight against infections, insect bites etc. Pepper added to one's diet helps in keeping your arteries clean.  It’s good for skin, relief for cough and cold.  It also helps to avoid ear-ache and gangrene. It is also good for conditions of hernia, hoarseness and insect bites. It relieves joint pain, a good treatment for respiratory conditions like asthma and whooping cough etc.  It is used to treat conditions of tooth decay and toothache. In ancient times, pepper was also used to treat eye problems.

f.)   Coriander (the leaves are cilantro)- Protects against the Salmonella bacteria, reportedly works as a natural chelation treatment, aids in digestion and helps settle the stomach and prevent flatulence.  Is an anti-inflammatory that may alleviate symptoms of arthritis.  It protects against urinary tract infections, prevents nausea, relieves intestinal gas, lowers blood sugar, lowers bad cholesterol (LDL) and raises good cholesteraol (HDL). It’s a  good source of dietary fiber, iron magnesium and rich in phytonutrients and flavonoids. It helps reduce feelings of nausea, eases hormonal mood swings and associated with menstruation. Has been shown to reduce menstrual cramping and adds fiber to the digestive tract.  It is a source of iron, magnesium, and is helpful in fighting anemia. It gives relief for diarrhea, especially if caused by microbial or fungal infections, helps promote healthy liver function, reduces minor swelling, strong general anti-oxidant properties, disinfects and helps detoxify the body, stimulates the endocrine glands.  It also helps with insulin secretion and lowers blood sugar, acts as a natural anti-septic and anti-fungal agent for skin disorders like fungal infections and eczema, contains immune-boosting properties and acts as an expectorant.

g.)  Cumin- helps in building healthy blood. It’s exceptionally rich in iron, making it a great natural supplement for blood health and an antidote for anemia.  It strengthening the immune system, supports healthy prenatal development in pregnant women. It helps with insomnia, memory loss and digestive function.  One of cumin’s most important uses may be in treating cancer. It helps with colds and respiratory, kidney health and healthy metabolism. Cumin boosts the metabolic rate and facilitates the absorption of nutrients throughout the body. Many herbal practitioners consider cumin to be one of nature’s best overall body tonics.

h.)   Black mustard seeds- Mustard seeds are rich in Selenium and Magnesium. Selenium help reduce the severity of asthma, decrease some of the symptoms of rheumatoid arthritis, and help prevent cancer. They are good source of omega-3 fatty acids, phosphorus, magnesium, manganese, dietary fiber, iron, calcium, protein, niacin and zinc.  Mustard stimulates the appetite by increasing salivation by up to eight times. It also has laxative, digestive and circulative stimulant properties.

i.)   Lemon juice- Lemon is known to relieve symptoms of indigestion, such as heartburn, bloating and belching. Regular consumption of lemon juice aids the bowels and helps them to eliminate waste more efficiently, curing bowel problems such as digestion and constipation.  Lemon is a diuretic, which means it's good for people with urinary tract infections and high uric acid problems. It helps flush out all the toxins and bad bacteria to help those with arthritis or rheumatism.  It is also a fighter of throat infections, respiratory disorders, and to prevent and control diabetes. It acts as a blood purifier and cleansing agent.  Lemon is a natural antiseptic medicine, and can cure skin problems. It is known to rejuvenate your skin from within, and will create a natural healthy glow. If you juice lemons daily, you should notice a dramatic improvement in the appearance of your skin. Due to its skin enhancing qualities, lemon also acts as an anti-aging remedy and can remove wrinkles, blackheads and acne. I've made it a habit to drink a full glass of lemon water before and after bedtime...it's a great way to end and start your day!

4.      Shrimp- Loaded with protein, vitamin D, vitamin B3, and zinc, shrimp are an excellent, carbohydrate-free food. Zinc supplementation of zinc deficient subjects has been shown to increase the levels of circulating leptin. Leptin is a hormone that plays a key role in regulating the body's energy expenditure, fat storage, and appetite. Insufficient leptin levels are believed to be the primary cause of food cravings, overeating, and obsession with food. The iodine in shrimp is good for the proper functioning of the thyroid gland which controls the basal metabolic rate, or the rate at which the body consumes energy at rest. Iodine deficiency can result in sluggish thyroid activity which in turn can lead to weight gain or hinder weight loss.  Shrimp contain astaxanthin, a carotenoid that gives them their pink color and that can act as a potent antioxidant and protect the skin from premature aging. Also the omega-3 fatty acids in shrimp provide antioxidant protection. The zinc shrimp boast plays an important role in the production of new cells (including hair cells and skin cells). It also helps maintain the oil-secreting glands on the scalp that keep hair shiny. In addition, shrimp are a good source of copper which can help prevent hair loss, contribute to hair thickness, and intensify hair color. Shrimp are loaded with selenium. Several population studies suggest that the risk of death from cancer, including lung, colorectal, and prostate cancers, is lower among people with a higher intake of the trace mineral selenium. Death rates from cancer are significantly lower in areas of the world where selenium is abundant in the soil than in areas where selenium levels are low. Selenium is believed to reduce cancer risk in two ways: First, selenium is an important constituent of glutathione peroxidase, an enzyme with anti-oxidant properties which can help protect the body from damaging effects of free radicals. Second, selenium is believed to prevent tumor growth by boosting the immune system and inhibiting the development of blood vessels to the tumor.  Shrimp are often given a bad rap for their high cholesterol content. Although it is true that shrimp are relatively high in cholesterol (about 200 milligrams in 3.5 ounces, or 12 large boiled shrimp), the Rockefeller study on shrimp and cholesterol suggests that shrimp cholesterol may not be that bad for you.

Cleure Products Review

Cleure- products below are Hypoallergenic, salicylate free, paraben free and sulfate free, made in the USA, and rated Safe by EWG Skin Deep (Environmental Working Group).  They are free from harmful chemicals and gentle on the skin and body.  I ordered a sample pack of the items below for only $10, individual sample prices below...and full sizes are of better value per quantity. The cleansers arrived very tightly sealed in plastic. I tried, and loved them all:)

Cleure face cleanser- 2oz- $4- The cleanser is a little runny and milky but had a very faint pleasant scent.  Although it didn’t lather much (since it doesn’t have the chemical SLS…which is a plus) it seemed to clean my face very well, not leaving it dry either.

Cleure face toner- 2oz- $4-  Like any other toner it was clear and liquid and worked like a toner is meant to, not leaving the skin dry or too tight because it’s alcohol free.

Cleure hair shampoo- 2oz- $4- The 2 oz sample was just enough to cover all my hair (and I have a lot of it).  It didn’t lather much because it doesn’t contain SLS, or any other harmful chemicals. I was very pleasantly surprised. It cleaned my hair very well.

Cleure hair conditioner- 2oz- $4- The sample was also enough to condition all my hair, and applying it made my hair feel nice and silky.  I let it sit for about 5 minutes before rinsing (like I do all conditioners) and it left my hair nice and manageable.  Over all I was very pleased with their hair care.  After reading so many reviews of other safe hair cleaner, I wasn’t sure how well this chemical free shampoos and conditioners set would compare to regular ones out there, but I give them both a thumbs-up!

Cleure body lotion- 2oz- $6- Free from all irritating chemicals this lotion is a very effective.  It absorbed into my skin very well and did not leave it feeling oily. It’s also fragrant free so had no scent to it. It’s a great lotion to stick in my purse.

If you have sensitive skin this is a great option for skin and hair cleansing needs.

Benefits & Dangers of Water

Benefits of Water

Drinking a healthy amount of water is vital to your health. You can never imagine just by changing this simple step, you gain tremendous health benefits, and sometimes you can even throw away your migraine medicine or pain killer.  You can live a week without food, but not without water...that should say a lot!

Before you can appreciate the benefits of water to your health, let’s review the role of water in the human body.

Functions of Water in The Body

The human body is anywhere from 55% to 78% water depending on body size. A rule of thumb, 2/3 of the body consists of water, and it is the main component of the human body. Did you know that your tissues and organs are mainly made up of water?
Here is the %:

  • Brain consists of 90% of water
  • Blood consists of 83% water
  • Muscle consists of 75% water
  • Bone consists of 22% of water
The functions of water in the human body are vital. The water:
  • Transports nutrients and oxygen into cells
  • Moisturizes the air in the lungs
  • Helps with metabolism
  • Protect our vital organs
  • Helps our organs to absorb nutrients better
  • Regulates body temperature
  • Detoxifies
  • Protect and moisturizes our joints and skin
Every cell in your body needs water from head to toe. That is why it is so important to drink enough fluid, especially when you are ill. Take for example, the brain consists of 90% of water, if you do not supply enough water to your body, your brain cannot function well, and you will get a headache or migraine. Hence, next time, if you feel fatigued or have a headache, it may be the sign of dehydration.

Harmful Effects and Symptoms of Dehydration

The Harmful Effects Result from Dehydration are:
  • Tiredness
  • Migraine
  • Constipation
  • Muscle cramps
  • Irregular blood-pressure
  • Kidney problems
  • Dry skin
  • 20% dehydrated – Risk of death
Symptoms of Dehydration
Here are some of the symptoms that signal you need more water:
  • Dark Urine – Dark Yellow or Orange in Color: Urine is generally pale yellow to clear when you have sufficient water intake. Dark color or smell strong indicates that you need to drink more water. Note: some medications or supplements may change the color as well. Such as high vitamin B will turn your urine neon bright yellow even when very well hydrated, this should not cause for alarm.
  • Dry Skin: Skin is the largest body organ and requires its share of water.
  • Thirst: Thirst is the most obvious sign that you're already dehydrated. It is always a good practice to drink more water when your are not thirsty, don’t wait until you're thirsty.
  • Hunger: Most people mistaken hungry as the indication to eat more, whereas in actual fact, you may be dehydrated. So before you have your snack, grab a glass of water.
  • Fatigue: Water is a source of energy, it gives you a boost in energy.

How much water should you drink a day to avoid dehydration?

A common approach is drinking 8 glasses of water a day, is it sufficient?

There is no clear-cut answer as to how much water to drink per day, because it depends upon a number of factors like your health condition, your activity status, the climatic conditions, physical size, your weight and your environment etc. You lose quite a lot of water through sweating, exhaling and urinating. In hot weather, you tend to lose more water through sweating, in cold condition, you tend to urinate more. In the event of sickness like flu and diarrhea, you tend to lose fluid. When you weigh more, your body needs more fluid for the muscle, organ, bone etc.

There are many recommendations advise that you drink 8 glasses (250ml/8 ounce per glass = total of approx 2 liter) of water a day. But is drinking 8 glasses of water enough? Remove the environmental, climatic factors and your activity level out of the equation, the amount of water intake is vary according to your weight. A more accurate estimation is to drink at least half your body weight (in pounds) in ounces of water. Let's illustrate with the following example:
1. If you weigh 160 pounds.
160 ÷ 2 = 80 (amount of water to drink in ounce per day)
Answer: Drink 80 ounce of water per day.
Which is ten 8 oz glasses of water
If you weigh 125lbs then eight 8 oz glasses of water is sufficient.

Safety Tips!
- Filter your water - Putting aside the other contaminants in water...Is your tap water fluoridated? Fluoride is not as safe as you may think! 10 Facts about Fluoride
Resource- Fluoride Action Network

1) 97% of western Europe has chosen fluoride-free water . This includes: Austria, Belgium, Denmark, Finland, France, Germany, Iceland, Italy, Luxembourg, Netherlands, Northern Ireland, Norway, Scotland, Sweden, and Switzerland. (While some European countries add fluoride to salt, the majority do not.) Thus, rather than mandating fluoride treatment for the whole population, western Europe allows individuals the right to choose, or refuse, fluoride.

2) Fluoride is the only chemical added to drinking water for the purpose of medication (to prevent tooth decay). All other treatment chemicals are added to treat the water (to improve the water's quality and safety - which fluoride does not do). This is one of the reasons why most of Europe has rejected fluoridation. For instance:
In Germany, "The argumentation of the Federal Ministry of Health against a general permission of fluoridation of drinking water is the problematic nature of compulsion medication."
In Belgium, it is "the fundamental position of the drinking water sector that it is not its task to deliver medicinal treatment to people. This is the sole responsibility of health services."
In Luxembourg, "In our views, drinking water isn't the suitable way for medicinal treatment and that people needing an addition of fluoride can decide by their own to use the most appropriate way."

3) Contrary to previous belief, fluoride has minimal benefit when swallowed. When water fluoridation began in the 1940s and '50s, dentists believed that fluoride needed to be swallowed in order to be most effective. This belief, however, has now been discredited by an extensive body of modern research (1).
According to the Centers for Disease Control, fluoride's "predominant effect is posteruptive and topical" (2). In other words, any benefits that accrue from the use of fluoride, come from the direct application of fluoride to the outside of teeth (after they have erupted into the mouth) and not from ingestion. There is no need, therefore, to expose all other tissues to fluoride by swallowing it.

4) Fluoridated water is no longer recommended for babies. In November of 2006, the American Dental Association (ADA) advised that parents should avoid giving babies fluoridated water (3). Other dental researchers have made similar recommendations over the past decade (4).
Babies exposed to fluoride are at high risk of developing dental fluorosis - a permanent tooth defect caused by fluoride damaging the cells which form the teeth (5). Other tissues in the body may also be affected by early-life exposures to fluoride. According to a recent review published in the medical journal The Lancet, fluoride may damage the developing brain, causing learning deficits and other problems (6).

5) There are better ways of delivering fluoride than adding it to water. By adding fluoride to everyone's tap water, many infants and other at-risk populations will be put in harm's way. This is not only wrong, it is unnecessary. As western Europe has demonstrated, there are many equally effective and less-intrusive ways of delivering fluoride to people who actually want it. For example:
A) Topical fluoride products such as toothpaste and mouthrinses (which come with explicit instructions not to swallow) are readily available at all grocery stores and pharmacies. Thus, for those individuals who wish to use fluoride, it is very easy to find and very inexpensive to buy.
B) If there is concern that some people in the community cannot afford to purchase fluoride toothpaste (a family-size tube of toothpaste costs as little as $2 to $3), the money saved by not fluoridating the water can be spent subsidizing topical fluoride products (or non-fluoride alternatives) for those families in need.
C) The vast majority of fluoride added to water supplies is wasted, since over 99% of tap water is not actually consumed by a human being. It is used instead to wash cars, water the lawn, wash dishes, flush toilets, etc.

6) Ingestion of fluoride has little benefit, but many risks. Whereas fluoride's benefits come from topical contact with teeth, its risks to health (which involve many more tissues than the teeth) result from being swallowed.
Adverse effects from fluoride ingestion have been associated with doses atttainable by people living in fluoridated areas. For example:
a) Risk to the brain. According to the National Research Council (NRC), fluoride can damage the brain. Animal studies conducted in the 1990s by EPA scientists found dementia-like effects at the same concentration (1 ppm) used to fluoridate water, while human studies have found adverse effects on IQ at levels as low as 0.9 ppm among children with nutrient deficiencies, and 1.8 ppm among children with adequate nutrient intake. (7-10)

b) Risk to the thyroid gland. According to the NRC, fluoride is an “endocrine disrupter.” Most notably, the NRC has warned that doses of fluoride (0.01-0.03 mg/kg/day) achievable by drinking fluoridated water, may reduce the function of the thyroid among individuals with low-iodine intake. Reduction of thyroid activity can lead to loss of mental acuity, depression and weight gain (11)
c) Risk to bones. According to the NRC, fluoride can diminish bone strength and increase the risk for bone fracture. While the NRC was unable to determine what level of fluoride is safe for bones, it noted that the best available information suggests that fracture risk may be increased at levels as low 1.5 ppm, which is only slightly higher than the concentration (0.7-1.2 ppm) added to water for fluoridation. (12)
d) Risk for bone cancer. Animal and human studies – including a recent study from a team of Harvard scientists – have found a connection between fluoride and a serious form of bone cancer (osteosarcoma) in males under the age of 20. The connection between fluoride and osteosarcoma has been described by the National Toxicology Program as "biologically plausible." Up to half of adolescents who develop osteosarcoma die within a few years of diagnosis. (13-16)
e) Risk to kidney patients. People with kidney disease have a heightened susceptibility to fluoride toxicity. The heightened risk stems from an impaired ability to excrete fluoride from the body. As a result, toxic levels of fluoride can accumulate in the bones, intensify the toxicity of aluminum build-up, and cause or exacerbate a painful bone disease known as renal osteodystrophy. (17-19)

7) The industrial chemicals used to fluoridate water may present unique health risks not found with naturally-occurring fluoride complexes . The chemicals - fluorosilicic acid, sodium silicofluoride, and sodium fluoride - used to fluoridate drinking water are industrial waste products from the phosphate fertilizer industry. Of these chemicals, fluorosilicic acid (FSA) is the most widely used. FSA is a corrosive acid which has been linked to higher blood lead levels in children. A recent study from the University of North Carolina found that FSA can - in combination with chlorinated compounds - leach lead from brass joints in water pipes, while a recent study from the University of Maryland suggests that the effect of fluoridation chemicals on blood lead levels may be greatest in houses built prior to 1946. Lead is a neurotoxin that can cause learning disabilities and behavioral problems in children. (20-23)

8) Water fluoridation’s benefits to teeth have been exaggerated. Even proponents of water fluoridation admit that it is not as effective as it was once claimed to be. While proponents still believe in its effectiveness, a growing number of studies strongly question this assessment. (24-46) According to a systematic review published by the Ontario Ministry of Health and Long Term Care, "The magnitude of [fluoridation's] effect is not large in absolute terms, is often not statistically significant and may not be of clinical significance." (36)
a) No difference exists in tooth decay between fluoridated & unfluoridated countries. While water fluoridation is often credited with causing the reduction in tooth decay that has occurred in the US over the past 50 years, the same reductions in tooth decay have occurred in all western countries, most of which have never added fluoride to their water. The vast majority of western Europe has rejected water fluoridation. Yet, according to comprehensive data from the World Health Organization, their tooth decay rates are just as low, and, in fact, often lower than the tooth decay rates in the US. (25, 35, 44)
b) Cavities do not increase when fluoridation stops. In contrast to earlier findings, five studies published since 2000 have reported no increase in tooth decay in communities which have ended fluoridation. (37-41)
c) Fluoridation does not prevent oral health crises in low-income areas. While some allege that fluoridation is especially effective for low-income communities, there is very little evidence to support this claim. According to a recent systematic review from the British government, "The evidence about [fluoridation] reducing inequalities in dental health was of poor quality, contradictory and unreliable." (45) In the United States, severe dental crises are occurring in low-income areas irrespective of whether the community has fluoride added to its water supply. (46) In addition, several studies have confirmed that the incidence of severe tooth decay in children (“baby bottle tooth decay”) is not significantly different in fluoridated vs unfluoridated areas. (27,32,42) Thus, despite some emotionally-based claims to the contrary, water fluoridation does not prevent the oral health problems related to poverty and lack of dental-care access.

9) Fluoridation poses added burden and risk to low-income communities. Rather than being particularly beneficial to low-income communities, fluoridation is particularly burdensome and harmful. For example:
a) Low-income families are least able to avoid fluoridated water. Due to the high costs of buying bottled water or expensive water filters, low-income households will be least able to avoid fluoride once it's added to the water. As a result, low-income families will be least capable of following ADA’s recommendation that infants should not receive fluoridated water. This may explain why African American children have been found to suffer the highest rates of disfiguring dental fluorosis in the US. (47)
b) Low-income families at greater risk of fluoride toxicity. In addition, it is now well established that individuals with inadequate nutrient intake have a significantly increased susceptibility to fluoride’s toxic effects. (48-51) Since nutrient deficiencies are most common in low-income communities, and since diseases known to increase susceptibility to fluoride are most prevalent in low-income areas (e.g. end-stage renal failure), it is likely that low-income communities will be at greatest risk from suffering adverse effects associated with fluoride exposure. According to Dr. Kathleen Thiessen, a member of the National Research Council's review of fluoride toxicity: “I would expect low-income communities to be more vulnerable to at least some of the effects of drinking fluoridated water." (51)

10) Due to other sources, many people are being over-exposed to fluoride . Unlike when water fluoridation first began, Americans are now receiving fluoride from many other sources* besides the water supply. As a result many people are now exceeding the recommended daily intake, putting them at elevated risk of suffering toxic effects. For example, many children ingest more fluoride from toothpaste alone than is considered “optimal” for a full day’s worth of ingestion. According to the Journal of Public Health Dentistry:
"Virtually all authors have noted that some children could ingest more fluoride from [toothpaste] alone than is recommended as a total daily fluoride ingestion." (52)
Because of the increase in fluoride exposure from all sources combined, the rate of dental fluorosis (a visible indicator of over-exposure to fluoride during childhood) has increased significantly over the past 50 years. Whereas dental fluorosis used to impact less than 10% of children in the 1940s, the latest national survey found that it now affects over 30% of children.
* Sources of fluoride include: fluoride dental products, fluoride pesticides, fluoridated pharmaceuticals, processed foods made with fluoridated water, and tea.(47, 53)

Lunch Salad

My daily homemade lunch usually consists of a salad of some sort.  One of my favorites is the salad recipe below.   It’s a very filling, full-nutritional salad high in fiber, protein, healthy fats and nutrients. I always use dark leafy greens, usually a mix of organic baby spinach and an organic romaine lettuce mix.  I sometimes throw in some strawberries and blueberries for a sweet touch.

Dark Green Salad with kidney beans and brown rice
1.       1 cups Organic Baby Spinach (10 cals)
2.       1 cup Organic Romaine lettuce mix (10 cals)
3.       1 medium tomato (35 cals)
4.       ¼  of a Red or Yellow bell pepper (15 cals)
5.       ½ cup of kidney beans* (120 cals)
6.       ½ cup of Brown Rice* (150 cals)
7.       1tbs slivered almonds (50 cals cals)
8.       1 tbs sunflower seeds (50 cals)
9.       2 tbs Fat Free Lime/Basil dressing (25 cals)
Total Calories- 465 calories

*Salad tips- I pre-soak about 2 cups of the kidney beans overnight (to make them easier to digest) and boil them in the morning for 1 ½ hrs or so, then put them in the fridge to last a few meals.  Same with the brown rice, I cook one cup which gives me about five ½-cup servings of cooked rice.

Dark Green Salad with kidney beans and brown rice Recipe

Chop up all the ingredients, mix together and you are done!
You now have a low calorie, filling meal high in protein, whole grains, fiber and nutrients.  If you like your salad to be sweeter, add some sliced fruit such as strawberries, blueberries, mandarins, apples or pineapple.

Green Salad Health benefits and more info:
1.       Organic baby Spinach- the overall healthiest, most nutritious vegetable for our salads because it contains the most types of nutrients and the highest amounts of them! It’s a lean mean green antioxidant-packing machine, rich in flavor and in Vitamins A and C, and iron. Spinach is loaded with important vitamins and minerals to promote healthy brain function as well as strong bones and muscles. Spinach is also extremely high in Vitamin K (cauliflower provides the highest amount). Not only is Vitamin K crucial for healthy bone formation and maintaining bone mass, but without it, our blood wouldn't clot. In addition, spinach contains high amounts of folate which aids in improving our memory and brain performance, and lutein, which fights diseases and aids eyesight.  Due to other phytonutrients, spinach has been shown to reduce our risk of liver, gallbladder, colon, breast, cervical, and prostate cancers, besides non-Hodgkins lymphoma.  The high amount of Vitamin B6 in spinach, which gives us energy, is vital in manufacturing our brain chemicals and nerve impulse transmitters, and our formation of blood. Also due to its Vitamin B6, spinach fights against allergies and works as an antidepressant. Note: Because Vitamin K is fat-soluble (it dissolves in fat), if we add a little olive oil to spinach, we'll increase our bodies' ability to absorb the vitamin.

2.       Organic Romaine Lettuce- while still made up mostly of water, is packed with antioxidants and fiber. The darker green the leaf, the more folic acid is present, which prevents heart disease.  It’s very low in calories. Magnesium, found in romaine lettuce, does wonders in revitalizing muscular tissues, the brain and the nerves. The chlorophyll-packed juice in lettuce is very helpful in maintaining normal hair color.  Lettuce is high in iron, which helps the formation of red blood cells. Lettuce may help in treating insomnia, acid indigestion, colitis, constipation, gout, stress and many other diseases as well.  Besides being exceptionally high in Vitamin A and Vitamin C, it is rated as excellent in Vitamin K, folate, fiber and chromium, very good in iron and phosphorus and potassium (a Vitamin B that helps lower our blood pressure), Vitamin B1 (thiamin), Vitamin B2 (riboflavin), and has plenty of Vitamin B3 (niacin), calcium, protein, and omega-3 fatty acids.   Romaine is superior in protecting our skin, eyes and immune system, and by helping to prevent our cholesterol from oxidizing, is good for our hearts. Yet it is extremely low in calories and salt, and has no fat or cholesterol. It also contains lutein and zeaxanthin.

3.       Tomatoes- (they're actually a fruit) are best known for their lycopene, the most anti-cancer carotenoid (more than beta carotene), which is twice as powerful as the antioxidant Vitamin E. Not only does lycopene lower the risk of all cancers, but research has shown that it is most effective in lowering the risk of prostate cancer. Note: Lycopene is also found in pink and red grapefruit and watermelon.  By cooking tomatoes, we concentrate their lycopene, which helps our bodies absorb higher amounts of it, so canned tomatoes are more nutritious than raw ones (apart from the fact that they were in a can...I'll save the BPA topic for later).  In pastes, they're very concentrated, so they have even higher amounts of nutrients such as beta carotene and iron. Lycopene is even better absorbed in salsa. But raw tomatoes are still quite nutritious in salads.

4.       Bell Peppers/Sweet Peppers are also among the most nutritious veggies, they contain power-packed antioxidant phytochemicals, beta carotene, folic acid, fiber, flavanoids,  thiamin, and Vitamins A and B6. And due to their high amounts of Vitamin C, bell peppers protect us against cataracts. They also fight against high cholesterol and help prevent blood clots, which in turn reduces our risk of strokes and heart attacks.  Red bell peppers have quite higher levels of nutrients than the green bell peppers. And unlike the green, they contain the phytonutrients lycopene, lutein and zeaxanthin. Besides its cancer-fighting abilities and heart protection, lutein fights against macular degeneration.

5.       Kidney Beans- are low in Saturated Fat and Sodium, and very low in Cholesterol. It is also a good source of Vitamin B6, Pantothenic Acid, Iron, Magnesium, Phosphorus and Potassium, and a very good source of Protein, Vitamin C, Vitamin K, Thiamin, Riboflavin, Niacin, Folate, Copper and Manganese.  Being a vegetarian it’s a great source of protein to replace meats, a cup of kidney beans provides 15.3 grams of protein--that's 30.7% of the daily value for protein.  Kidney beans, like other beans, are rich in soluble and insoluble fiber. A cup of cooked kidney beans provides 45.3% of the recommended daily intake for fiber.  In addition to providing slow burning complex carbohydrates, kidney beans can increase your energy by helping to replenish your iron stores.  When combined with whole grains such as rice, kidney beans provide virtually fat-free high quality protein...which is why i added brown rice to my salad...and it tastes good.

6.       Organic Brown Rice- The brown rice nutrition benefits far outnumber that of white rice. Aside from the obvious difference that is color, brown rice has more nutritional value than white rice.  Fiber in brown rice aids in the reduction of cancer-causing substances. Additionally, the trace mineral selenium found in brown rice also reduces the threat of colon cancer, asthma, heart disease and alleviates arthritis pain. Selenium also strengthens the body’s immune system by stimulating the apoptosis, which mainly eradicates abnormal and depleted cells.  Manganese found in brown rice facilitates the production of energy from protein and carbohydrates (hence eating it with beans. It also helps maintain a healthy nervous system and aids in the production of sex hormones by synthesizing fatty acids and producing cholesterol.  This mineral is active in promoting the proper use of the body’s glucose and insulin, thus bringing down the risk of Type 2 diabetes. Magnesium is also beneficial for asthma sufferers. It prevents calcium from quickly going to the nerve cells and, as a result, relaxes the cells. An overstimulated nerve cell causes muscle spasms such as in those who suffer asthma. The phytonutrient lignan, also common in brown rice, assists in defending against breast cancer and heart ailments. A study done involving elderly women proved that eating whole grain foods such as brown rice boosts the enterolactone levels in the blood, which lowers the risk of cancer and heart disease.

7.       Almonds- Almonds are a very good source of vitamin E and manganese. Almonds are a good source of magnesium, copper, rich in folic acid, riboflavin (vitamin B2), and phosphorus. Fortunately, although one-quarter cup of almonds contains about 18 grams of fat, most of it (11 grams) is heart-healthy monounsaturated fat.  They lower LDL-Cholesterol and Reduce Your Risk of Heart Disease.  Almonds Provide Double-Barreled Protection against Diabetes and Cardiovascular Disease. They also improve skin and hair texture. Vitamin B contents in almonds promote healthy growth of hair as well as nails.

8.       Sunflower seeds- Sunflower seeds are an excellent source of vitamin E, the body's primary fat-soluble antioxidant. Sunflower seeds also an incredible sources of folic acid.  Like other nuts, they are also very good source of proteins with fine quality amino acids such as tryptophan. In addition, the sunflower seeds contain many health benefiting poly-phenol compounds such as chlorgenic acid, quinic acid, and caffeic acids.  They are one of the finest sources of B-complex group of vitamins. They are very good sources of B-complex vitamins such as niacin, folic acid, thiamin (vitamin B1), pyridoxine (vitamin B6), pantothenic acid, and riboflavin. The seeds are incredibly rich sources of many essential minerals. Calcium, iron, manganese, zinc, magnesium, selenium and copper are especially concentrated in sunflower.

9.       Lime/Basil dressing- a low cal dressing to complete the salad.  I plan on making my own oilve oil dressing soon.

Salad Ingredients- Chop and mix together
