Vegan Ginger Lo Mein

  • 2 tbsp teriyaki sauce
  • 2 tbsp alternative soy sauce
  • 2 tbsp wine vinegar
  • 2 tbsp ground ginger
  • 2 stalks celery, diced
  • sliced carrots
  • 2/3 cup snow peas
  • 1 red onion, diced 
  • 2 eggs
  • 3 tbsp olive oil
  • 1 tbsp sesame oil
  • 16 oz lo mein or Chinese style noodles

Whisk together the teriyaki sauce, alt. soy sauce, vinegar and ginger. Set aside.
Cook the lo mein noodles until soft, about 6 to 8 minutes, then drain.

In a large skillet or wok, sautee the onions, then the rest of the vegetables in 2 tbsp of the olive oil for 3 to 5 minutes, or just until tender.

Add remaining oil and the teriyaki and soy sauce mixture to the skillet, then add the lo mein noodles. Allow to cook for another 5 to 7 minutes, stirring frequently and adding more moisture if needed.

 Chopped veggies

 sautee onions

 add veggies

Stir fry veggies for a couple minutes

 Add sauce

 Add noodles and mix in for a few minutes
