Bean sandwich w/ Guacamole

Bean Patty Sandwich with Guacamole and

Ingredients:
  1. Guacamole- 1/4 red onion, 1/2 lemon, 1tsp garlic, 2 ripe avocados
  2. Bean Patty- see  blog on 11/4/2011 for recipe
  3. Raw Onion Bread - see blog on 10/29/2011 for recipe 
  4. Raw un-cheesy cashew sauce- see blog on  9/10/2011
  5. Tomato slices
  6. Cucumber slices
  7. small handful of baby spinach
  8. small handful of romaine lettuce

Recipe:
To make the guacamole, just smash up the 2 avocados and add the juice from one lemon, galric to preference and as much chopped up red onion as you desire (best if cut up small).
Then spread the onion bread with the un-cheesy cashew sauce, the place the bean patty, guacamole, cucumber, tomato, spinach and lettuce. Hold with two hands to eat!

Since the beans were soaked and sprouted for almost a week you can certainly make this a 100% raw dish and not heat the bean patty.
Then for dinner I made another dish I thoroughly enjoyed with the bean patty, which was heating up some left over mushroom and lentil (see blog from 11/2/2011 for recipe) placed on top of a bean patty that I made bigger and thinner than I did for the sandwich above. And I included some steamed broccoli and cauliflower with my un-cheesy cashew sauce.  I also finished up the guacamole and added some of the left over fresh tomato to it from my lunch sandwich.
